Chicken Casserole

This is a 100% made up on the spot accident of a casserole!

I was going to make something different then realized I was missing an ingredient, and with no time to make anything else I super improvised!

I had no idea what I would end up with but let me say I am pleasantly surprised and I will Definitely make this again!


I had cooked my chicken breast in the crockpot in a cup of chicken broth on high for 3 hours. You can bake them or boil them, or use a rotisserie chicken!

3 chicken breast, cooked and shredded. Or a rotisserie chicken shredded

1 block cream cheese, softened

1/4 cup sour cream

1 can cream of chicken soup

1 cup chicken broth

1 box stove top stuffing, chicken or turkey

1/2 tsp salt

1 tsp pepper

1 1/2 tsp poultry seasoning

1/2 tsp red pepper flakes

1/2 tsp garlic powder

1/2 tsp onion powder

1 sleeve ritz crackers

5 tbs butter, melted




heat oven to 350

combine everything BUT crackers and butter in a bowl. Place into an 11x7 nonstick baking dish.

crush crackers, melt butter and combine. Place over the chicken mixture. bake for 40 minutes!
