Almost everyone loves green beans. They are a very neutral veggie and go with just about anything. Like chicken, you can also transform them to taste many different ways.
They are super simple to make with just a few ingredients. You may make a little mess, but hey, it happens. For best results I like to toss mine in the deep fryer after they are all done (I have to make a ton since I feed so many people) and it gives them that extra special, extra desirable crunch that everyone loves!
If you do not have an air fryer that is perfectly fine! You can dry them on a wire baking rack to let the grease drain off and it’ll keep them crunch, too.
Make these in huge batches since it can be a messy process and flash freeze, then place them in freezer baggies to have on hand for any time.
The perfect appetizer for a game with ranch on the side, or a crunchy compliment to almost any meal! You absolutely can not go wrong with these.
1-2 lbs green beans, fresh or whole frozen
using frozen, keep frozen they will thaw while frying. If you thaw beforehand they will be mush.
2 eggs, beaten
1/4 cup milk
1/2 cup water
1 1/2 cups all purpose flour
3/4 cup cornstarch
1 tbs salt
1/2 tbs pepper
1 tsp paprika
1/2 tsp cayenne
Oil for frying
ranch for dipping, optional
extra salt for seasoning when out of the fryer.
Fill a dutch oven or pan close in size halfway full with vegetable, corn or peanut oil. Heat over medium high and let it fully heat. You want about 360-375 as the temp. You can use a deep fat fryer if you have one. In a shallow dish mix eggs with milk and water. In another shallow dish add flour, cornstarch, salt, pepper, paprika, and cayenne. Which together. If using fresh green beans place in a strainer and run water over them to get the outsides wet. Dip in flour mixture and shake off excess, then into egg, then back into flour. Place on a baking sheet and let them sit in the fridge for 20-30 minutes. *you can totally do this first while the oil heats* Once they have sat and the oil is heated place a handful at a time into the oil. Cook 3-4 minutes until they are all floating and golden. Place on a baking sheet lined with paper towels if you are going to air fry afterwards. If not place onto a wire rack that is over a baking sheet. Sprinkle with salt and serve with ranch!
if freezing do not cook first. coat them all, let them sit in the fridge for 20-30 minutes. Then place them into the freezer on the baking sheet not covered. leave them in the freezer for 1-1 1/2. then place into individual babies and freeze. When ready just fry them in hot oil like above.
